Customers lack empathy?

Do customers really know what goes on in the kitchen, or how hard Chef's work for so little money...
Or are they just thinking about themselves...

As a chef, I don't think people truly understand how much is involved. I mean how hard is it to grill a burger or fry a fry? I wish I could give every customer who makes this claim, just that experience. For example, cooking for say a family of 4, can be done in 30 minutes or less and with great attention. Now in a restaurant you are usually cooking for 30-40 at a time and are expected to do it in 15 minutes or less with perfection and attention to the annoying substitutions. Every chef despises substitutions, it throws off our timing. We train ourselves one way, the way we see it. Just as every artist views their artwork. Everytime we have to make a change it slows the pace. I'm sorry but the customer is not always right.
